So, on these hot high desert Reno summer days, we look to foods that don't require too much time running hot appliances in the kitchen. On Monday night, I decided to try a cold soup, no cooking required. I pulled out my fabulous 500 Soup Recipes book (some generic bargain bin book from Borders ages ago) and chose the Cucumber and avocado soup. We received the cuc's in our CSA box last week so it was the perfect use for them! It came out delicious so I thought I would share the recipe with you all.
Cucumber and Avocado Soup:
- 2 large or 3 medium Avocados - 1 Cup chopped Cucumbers - 2 Cups Veggie Broth - Juice of 1 Lemon - 2 tbsp Dry Sherry - 1/3 Cup coarsely chopped Green Onions - 1 tsp salt (I didn't find we needed it) - Sirracha Pepper Sauce- optional (also known around these parts as "cock" sauce because of the rooster on the label) - Plain Yogurt for garnish
Directions: Put all ingredients except the Yogurt, some of the green onions, and the broth into a food processor. Blend until smooth. Gradually add the veggie broth as the processor is running. Taste and add Sirracha Sauce and Salt if needed. Serve with a dollop of Yogurt and sprinkle with green onions. We served it with warm homemade bread right out of the oven! Yum!
